Pumpkin No Bake Energy Bites
8 oz. chopped dates
¼ cup honey
¼ cup pumpkin puree
1 Tbsp. chia seeds or flax seeds
1 tsp. ground cinnamon
½ tsp. ground ginger
¼ tsp. ground nutmeg
Pinch of salt
1 cup old-fashioned oats (dry)
1 cup toasted coconut flakes
1 cup toasted pumpkin seeds
Combine dates, honey, pumpkin puree, chia seeds, cinnamon, ginger, nutmeg and salt in a food processor and pulse until smooth and combined.
Transfer the mixture to a large bowl, and stir in the oats, coconut flakes, and pumpkin seeds until evenly combined. Cover and refrigerate for 30 minutes.
Once the mixture is cool, use a spoon and cookie scoop to shape it into your desired size.
Store in the fridge for up to 2 weeks.
