Paleo Protein Bar WITH Chocolate
½ cup coconut flour
½ cup paleo protein powder of your choice – any dairy-free, non-whey protein works
2 cups cashew butter – any nut or seed butter will do
½ cup pure maple syrup – honey or agave may be used
1 serving of dark chocolate to frost – optional
Line an 8×8 inch loaf pan or cake tin with parchment paper and set aside.
Add coconut flour and protein powder to a mixing bowl and set aside.
In a heat safe mixing bowl, melt cashew butter and maple syrup over a double boiler. Whisk to ensure the mixture is combined.
Remove mixing bowl from heat, and pour cashew butter and maple syrup mixture into the flour and protein powder mixing bowl. Mix until thoroughly incorporated. (If batter is crumbly, add water until a thicker batter is made.)
Pour batter into lined baking dish and press firmly into place.
Refrigerate for at least 20 minutes and allow the mixture to firm up.
Top with chocolate frosting, and refrigerate for 40 minutes.
Remove from loaf pan or cake tin and cut into bars.
