Blueberry Lemon Energy Bites
1 ½ Cups cashews
½ cup unsweetened shredded coconut (you will need a little extra for rolling)
½ cup dried blueberries
¾ cup dates – pitted and roughly chopped
1-2 Tablespoons fresh lemon juice
1 teaspoon lemon zest (you will need a little extra for rolling)
½ teaspoon pure vanilla extract
Pinch of sea salt
Blend cashews and shredded coconut in a food processor until they become a coarse meal.
Add blueberries, dates, lemon zest, lemon juice, vanilla extract and sale until the mixture forms a rough dough.
Roll into 1-1 ½ inch balls. Roll into coconut and lemon zest.
Store in the fridge for 2 weeks!
